I followed this recipe but I chose not to bake it at the end. When I tell you it is THEE best vegan mac n cheese I’ve ever recreated. It is THEE BEST. If you’re one to test out recipes please go for it. Soooo good.

I went for the seafood with penne
He put shrimp and scallops with a white wine butter and garlic creation. I told him to surprise me.
He did a great job.
I need to put a dish like this on the menu for next week! I’ve got some lovely shrimp in the freezer. Good scallops are harder to find here, but I’ll look. I’d probably add asparagus. Or peas.
A late night meal, a throwback to college years. Cheesy ramen! Freshly grated smoked Gouda added to drained ramen noodles, a sprinkle of the chicken seasoning packet, and a splash of hot water reserved from draining the noodles. I added some peas and carrots and a chopped up faux chicken patty (microwaved from frozen). Just a dash of black pepper to finish I couldn’t believe how satisfying this was to eat. Definitely a rare treat.
