That’s it…I’m doing a Hailstrom meal this week! Do you ever roast turnips? I have a bunch and it’s been a while since I’ve cooked them.

There’s turnip in this! Well, swede, which is a type of turnip. With carrot, peppers, red onion, green beans and halloumi. Seasoning is just salt, pepper and chilli flakes. But you could do anything, add whatever protein you like, or just do the veggies. Any herbs and spices you prefer. I roast the swede, carrots, harder veggies for 15/20 mins first, than add all the other bits and cook for a further 20ish minutes. I would normally add some coriander at the end but forgot this time.

It’s mostly about timing tbh. I virtually never cook anything for a specific time. I tend to watch over it and go by sight :eyes:

For me, cooking has gradually formed part of my overall mindfulness/self-care approach to life, just like meditation/yoga etc. It’s an opportunity for me to do something kind for myself, to take the time to focus on it, take care. Let other worries fall away for a short while. It can be a kind of meditation in itself honestly. That’s been a real development in my journey recently, being able to find meditative moments within other positive actions.

Same! And I feel it when I don’t cook for myself. You’ve described it so eloquently. Now I want to get cooking but I’m under the weather. Hopefully tomorrow. I’m very grateful I have foods I’ve prepared and frozen available for times like these.
