We have very limited choices also. Mostly just Mexican, Chinese and like Applebee’s. My tummy will be happy to go back to the routine food lol but I’m gonna miss the adventure of trying all the new stuff

So I made sugar cookies last night and I accidently cooked them too long and they were pretty hard when they cooled. I decided to make ice cream sandwiches out of them. Waste not want not, right?
There is vanilla ice cream, a marshmallow cream layer, and then reeses pieces in one and a strawberry and cream mix in the other. Then a few with no fillings. Stored in freezer for now so the cookies soften and the insides harden a little.

There you go! I often make 40 at a time. They freeze really well. Cornmeal is better than semolina for me. No oil is needed in the pan when you cook them. Enjoy!
Edit: I tend to weigh the dough when it’s ready to form into the muffins, then divide that number by 10 to get equal portions but for some reason it’s always off a little.
I made two carrot cakes and one for my neighbor she’s GF with coconut flour. I added pineapple and walnuts to it and it turned at really good. Not the prettiest though.

One of my favorite Mexican restaurants, and one of my favorite dishes. I am so bummed I forgot to ask for corn tortillas and I (oddly) have none in the house.
I should clarify, it’s my favorite “fast” Mexican food. Except for the use of the I-don’t-know-what-kind-of-cheese-this-is, this place is authentic, fresh, delicious. My favorite sit-down Mexican has the Molcajete, which is probably my all time favorite dish.
