What an interesting idea. Sounds like something my mother would make. She was all about the cream of chicken and cream of mushroom soups in things.

Here is the Butternut Squash soup I have been making of late. Mushrooms, Poblano, Paprika, Sage, Thyme, and lentils in this case. I ran out of broth so added it the next day. As you can see, I microwaved the butternut whole. @beardson Other pic is a salad with more beautiful pears, quinoa red and white, kale and spinach.

Including a recipe I have used for MANY years for Butternut Squash soup. First time I have looked at the recipe in that many years too possibly! IT is wonderful.
I would no longer blend it together, preferring it chunky. Recipes are for guidanceā€¦ I would use lots more garlic and applesā€¦ and apples of many kinds. At the bottom the recipe is tripled.

Butternut Squash, Apple, Onion, Sage, Thyme Soup
Makes 6 cups
1 1/2 [2-3 lb] butternut squash, halved, seeds removed
3 tbsp olive oil
1/2 small head garlic, top removed
kosher salt, fresh ground pepper
1 apple, peeled, cored, cut into 3/4inch chunks
1 med yellow onion, chopped
4 cups low sodium chicken/ vegetable broth
1 1/2 teaspoons balsamic vinegar
3/4 cup half and half or milk
1/2 tsp poultry seasoning or sage
Heat oven to 400F
Cover squash and garlic w 2 tbsp olive oil and sprinkle w salt and pepper
Place on baking sheet, cut sides down and roast until carmelized, 35 to 45 min.
During the last 15 minutes of cooking, place apple chunks on the pan w the squash
Remove squash, rest, cool
Put remaining olive oil in large saucepan and cook onions until soft
Remove squash from skin, put in pot, add apples, garlic and squash to the onions
Cover w chicken/vegetable stock and bring to a simmer
Add balsamic vinegar and half and half- or milk- and poultry seasoning or sage
Using an immersion blender, puree the soup until completely smooth, or use regular blender
Serve warm

For the recipe times 3, [18 plus cups], I use 10lbs of squash, 3 onions and about 8 Granny Smiths Apples, ( green )
and extra balsamic
I use some fatfree half and half and about a third fatfree milk
I use a little poultry seasoning and 5-6- leaves of fresh common sage
Threw fresh thyme in
Iā€™ve thrown a little orange juice in for a nice surprise flavor.

Jennifer I made up the recipe because Iā€™m bad at following recipes but I typed it out for you!
Preheat oven to 350

For the fruit

  • three little pears ( take out the core and cut into thin strips)
  • 1 big apple ( same as the pears)
  • 2 tablespoons flour
  • 1/4- 1/2 cup brown sugar (depending how sweet you like it
  • Juice of half a lemon
  • 2 tablespoons of vanilla
  • Cinnamon couple shakes
  • Cloves couple shakes
  • Nutmeg a shake
  • Ginger couple shakes or I used fresh
  • Dash of salt
  • Mix all of these together in a bowl then put into a little baking dish ( it looks like we have a twin glass one :slight_smile: ) you can sub apples for pears
    For the crumble
  • 1/4 cup of melted butter
    -1/4-1/2 cup oats
  • 1/4 cup of brown sugar
  • 1/4 cup of walnuts
  • Couple shakes of cinnamon, cloves, nutmeg, and a bit of salt.
  • Mix together
  • Add 1/2 cup flour and mix till it looks crumbly and sprinkle on top of the fruit
  • Bake for 35-45 minutes or until the fruit is soft and the crumble is golden

I know they make sugar alternatives that you could probably substitute. I would go up a little on the ginger and spices to maybe cloak the ā€œimposterā€ sugar taste haha
Or maybe you could use a little fruit juice like apple juice or cherry juice to mix in the fruit and bake it. That way it would be no sugar added!

You could also use honey or agave or maple syrup but I donā€™t know if your keto or low carb

This recipe is perfect!! I also measure in shakes :joy::joy: I have some apples I need to use up and this seems like a yummy way

Haha yeah Iā€™m not about to dirty a bunch of teaspoons. Shakes is the best measuring unit. I had pears that were on their last leg and it turned out so yummy. I did an hour of hot yoga this morning and needed some carbs ( and sugar sorry Eric ) to feel human again.

@Dazercat just do it without sugar! Your taste buds are tuned to ā€œno sugarā€. You could pop some raisins or blueberries in there or like Callie says some pure fruit juice, no sugar added.
