Definitely agree. When I first moved out on my own I did all my prep with an old steak knife. My first real knife was a game-changer.

Lazy chicken pot pie. Leftover rotisserie chicken and cooked potato, frozen veggies and a can of cream of chicken soup (lower sodium) mixed with a half can’s worth of milk and lots of herbs and seasoning. Store bought refrigerated pie dough, though I did spring for some fancy brand, which was well worth it! My guy’s wishes came true with very little stress on my part.

My take on beef enchilada caserole with Spanish rice and cheese nacho.
Enchilada is 3 layers of white corn tortilla, seasoned ground beef, refried black beans, cheese, corn and olives. Topped with lettuce, tomatoes, cilantro, onion, avocado and a dollop of sour cream.
One egg, about 5 egg whites, avocado! All the food looks great! Lots of comfort food here! Beautiful chicken pot pie @RosaCanDo
