My mate has just started a new job and they sent her 12 brownies in the post. Just because. Apparently they send chocolate bars and everything.

I’d say I was in the wrong line of work but by proxy I’m benefiting so all is good.

Single egg omelet with a few slices of queso fresco and half a perfect avocado. I have a few left and need to use them, fast! I just love the slight saltiness of queso fresco/Mexican farmer’s cheese.

This was breakfast! It’s from a restaurant aptly called “Mas Chingon.” It’s a little pricy for what should be Mexican street food but I don’t care. It tastes like a 4-seat hole in the wall in San Jose.

That bit in the lower corner is veggie ceviche. Interesting, as it has pineapple and mango and I don’t usually like mixing savory and sweet, but the combo of lime and chiles just works.

Come on over to Omaha and I’ll show you around!

And edit - this is leftover from last night. Portions are large!

How are you keeping yourself stocked with avocados? We have slim and super expensive pickings over here.

They were also that way at my major grocery, but the Natural Grocers had hard green ones so I bought some and of course they are all ripe at once because I forgot to put them in the fridge soon enough. Target has them, too, also hard but less expensive, like the kind you buy in a netted bag. I bought all the avos!!!

$1.50 for a good sized, in regular grocery.
.89 right now for a small one at Aldi

Even though I have now lived here (Nebraska) almost as long as California, I still pine for readily available, roadside avocado stands. :slight_smile:

Target shows $2.39 for 6, but they are smaller than a closed fist.

The nice sale on the big hard ones was 3/$2.50, but I don’t remember the price of the smaller ones. I think generally I pay close to same as Jené. And I’ve never quite known when they’re in season since they’re shipped over and we do go through dry periods. Dry, sad periods.

As @RosaCanDo said, keep mine in the refrigerator. I buy jumbo ones they are delicious. I eat half of one every day.
I buy them hard as a rock. Then I put them in the refrigerator. They are at different stages in there. I always have a ripe one. They are just gorgeous and delicious. If I have too many hard ones I can take one out for a day or so to ripen it. I’m always reading the stuff on the Internet on what to do with the avocados. This is worked for me for many many years. I’m a long way from the grocery store. Lately on the Internet they’ve been saying let them get ripe and then refrigerate them, that wouldn’t work for me.

Meatless collards. I still love fresh, mahi & wahoo but I’m gearing toward less meat. I love eggs and cheese so I don’t know all the crazy names for labeling how I eat…haha I guess I’m a lesser animal eater ahh who knows I’m not that interested in dissecting that subject… all I know is I’m soo ready for these greens!
