Chili lime ginger soy flavored stir fry with tofu and veg. Almost too spicy for me! Almost…I wiped tears away while devouring it, it was so good.

I cut an whole chicken in half an then roasted it.i put the leg,thigh an wing up for another day an made chicken salad with the rest.

Even tho I am so sick with a head cold, I wanted to make a nice supper for me and hubby. Slow cooker to the rescue! A beautiful roast seasoned with salt and pepper and dried thyme over a bed of carrots and baby potatoes. Threw in a bit of garlic. Yummm. My body needs nutrients now!

Didn’t take the greatest photos of this meal, but I’m super proud of these vegetarian tacos. “Rajas,” which just means strips of poblanos (I broiled until charred and removed skins and seeds) and I added them to Yukon potatoes, onion and sweet corn (frozen kernels from the past summer). Just salt and pepper to season. Tacos with queso fresco, lime crema, avocado, salsa verde and red cabbage for crunch. Side of seasoned black beans and a chile lime cucumber and sweet onion salad. It just really hit the spot! The most satisfying veggie tacos I’ve made.

Edit to say I wish I had like twice as many poblanos :sob: That’s all I had on hand. Next time!
