Pan-seared Mahi Mahi until golden in cornmeal, garlic, cayenne seasoning, cabbage, chipotle sauce, tomatoes served with rice, beans, and a cheesy smashed potato

The chicken, who laid this egg, was attacked by a predator a couple months ago. She has been in chicken hospital with 1/2 her back end torn up. Not only did she miraculously survive, we are rewarded with these beautiful winter eggs. She’s kicking ass over the “healthy” ladies.

They’re the best for microwaving and leftovers. I got the lid with the little hole in it too to vent.

Haha I was really hoping in retirement i’d no longer have to eat leftovers from 1/6 pans, you have just proved it will never end. Haha
I guess you aren’t standing in an office inhaling it after it’s been sitting there three hours. So that’s progress :joy:

Whole wheat rotini, ground turkey, grape tomatoes, asparagus, fresh basil

Cook the turkey alone. Asparagus boils in the water w/ the pasta. Tomatoes roast in the oven w/ olive oil and balsamic vinegar until they burst open. Then fuck everything into a pot together and stir til the tomatoes fall apart. Not bad. I’m a sucker for balsamic vinegar.

I had a lot of fun with this one! And it is freaking delicious!!! My husband was skeptical but he loved it. Spaghetti squash with chicken spinach artichoke topping, like a bit lighter version of the dip (sauce is coconut cream, mayo, parmesan and lemon juice). And now I’m thinking of all the ways to potentially top spaghetti squash boats!

Barley and lentils, with spinach. Eggs and tomato, with spinach. Avocado in a yogurt container in the car with the barley and lentils.
My own version of Dutch Stamppot (potato and kale with olive oil) with avocado and strawberries! The Lactinato Kale at the grocery store has been wonderful! So happy to get it after growing it for many years.
