It was magical!
It was a grey day and I wasn’t feeling like cooking much but I got this hodge podge soup put together. It’s got a bit of a southwestern US thing going on with black beans, rice, frozen veggies, canned diced tomatoes, ham steak, lime juice, and some spicy jarred salsa. Hit the spot for a quick and warming dinner.
The hubs made chili last night and i made jalapeno cheddar bread since i harvested a bunch of peppers! Tonight i had the same thing but with a similar salad i posted yesterday but with pistachios thanks to @Dazercat! Thank you for the suggestion it was so good! I feel very nourished

I like crunch in my salad. And I figure they are a healthier option than croutons. I’m happy you tried and liked it. They do work especially well with beets and goat cheese salads.

It is here at TS that I learned that I could even have one. Before I never had any, at all, because I ran the risk of eating the rest of the box just mixed up in the bowl raw or cooking one after another. Thank you TS.

@chey.o I use pistachios a good bit, my favorite is with spinach and tangerines / mandarins … in a salad. Your jalapeno cheddar bread looks big YUM!

It is a packaged mix! It is Kodiak Protein Packed Carb-Conscious Flapjack and waffle mix. Buttermilk. I add almond milk.
Lots here probably know good homemade recipes. My instagram is full of good healthy pancakes, most no sugar and all healthy ingredients… Lots of the cooks use bananas, applesauce. Scroll up about two or three days and you will see @Sabrina80 pancakes that she made a few days ago with the recipe!

It is 15 gram net carb, they have a regular pancake that is more carbs and 50 less calories… oh! And lots tastier!
Chicken soup for the upset belly.
You don’t always need a whole chicken, works with chicken breast too.
My elderly neighbor surprised us with some fish he caught a while back that he thawed too much of and was tired of eating , walleye and a bunch of bluegill. He also brought over his favorite batter mix, so I decided to try frying fish for the first time. I did the walleye tonight and it came out great! Not bad for diving in without much of a clue what I was doing (though I have watched videos of people do it before). I’ll probably make fish tacos with the bluegill tomorrow or the next day, just pan seared this time, though. They’ve got more bones we need to look out for. Might even flake it up to catch the bones first before serving.
Made a quick slaw and had some sweet corn ready to round out the meal. Yum!
My neighbor gave me some of those bubblr drinks to try and they are so good!!! I love the triple berry one!
