Insomnia strikes and so does hunger. I made a quesadilla with freshly shredded Colby, a small can of salmon mixed with some green hot sauce and a bit of mayo, and more cheese. Then topped with crema and more hot sauce. Hits the spot while I read for a while. Saving the other half for lunch tomorrow.

No sleep…so I made a roasted tomato soup with my hoard of heirloom garden ‘maters. Have one last pile of tomatoes left to ripen.
They made an interesting color for soup (almost looks like a squash soup) but it’s really delicious. Tastes creamy and delicate due to those yellow tomatoes, a great use for them. Perfect for the cold snap we are having, along with a grilled cheese!

I suggest creaming the butter and sugar together before adding the flour, and add the flour in parts, not all at once, so it has time to mix evenly. Also, I raised the temperature to 325 F (about 160 C), instead of the 300 F / 150 C given in the recipe.
Interesting, that your tomatoes still ripe. Our tomatoes topped growing 2 weeks ago.
Yeah, just pulled the last ones off the vine and they all need to ripen inside. I usually have some at the end of the season that I bring in to finish up.

Yeah I know, the chicken looks sad. I have to cook it to avoid fats and I can’t use the spices I love so much until my stomach is feeling better.
I cooked the chicken in a strong veggie broth, the puree is a mix of potatoes and carrots.
Update:
I was able to eat one chicken breast, 3 tiny potatoes and 2 tiny carrots without any stomach pain
Variation on a friend’s luke warm pasta dish with cured ham, mozzarella, tomatoes, rucola and some of the best olive oil and white balsamic vinegar in town.

Roasted tomato and basil soup and grilled cheese - Colby jack on rye. Classic! I added some diced tomatoes for more chunks and stirred in some sour cream. Husband called it gourmet lol

Up before dawn but I got a bit of sleep. Woke up hungry! English muffin with peanut butter and blueberries. I had forgotten about this - used to eat it frequently. Happy memories.
Curious what kind of PB folks buy? Especially no added sugar? I need a new brand after I get through this sugary stuff I have on hand. Do people grind their own (I think my natural food store has a grinder, or I’ve heard of people using a food processor) or is there a favorite natural PB brand? @Dazercat what kind of no added sugar peanut butter is your go-to for your pretty lunches?
This is basically banana porridge. I added one egg and some flour and made pancakes

I also like the second, which I buy less often; it is USA brand but I like the dark roast. They have smooth too
