Greek style baked risoni (or in my case risotto). Wasn’t wearing my glasses while grocery shopping and thought I bought risoni was so fun to cook something different and omg it was delicious!!!
I call this “mama is under the weather goulash.” Leftover Mac and cheese, frozen peas and carrots, a chopped fresh tomato and a can of tuna. Saves the day. I’m really hoping to get cooking tomorrow.

We got a Blackstone griddle yesterday, so naturally everything I cook is on that now lol.

Healthy Choice Simply Delicious Broccoli and Chicken Alfredo , 190 calories, too bad I did not stop there. When I cooked it I thought how much I have changed in the last year. Last year I never mixed the alfredo sauce in to it. This year I defiantly did. Oh dear… I am a vegetarian wanting some extra protein without the ( in the raw) bloody chicken… I ended up finishing off a bag of pecans… 1200 calories of pecans in two days. How can they be that Calorie Dense. Thanks for listening, I am headed to an eating too much thread. Wish I had spent the calories on some of ya’lls desserts or cheese!

It’s one of our go-tos for camping! Any tinned fish/shellfish, honestly. Smoked is great but my husband doesn’t always like the strong smoke flavor.

My camping snack go-to’s are trail mix (of course), kielbasa (Polish sausage) with cheese and crackers / pumpernickel / rye bread, and apples with cheese (have you tried apples with cheese? It’s delicious. I like a tart apple like Granny Smith with a nice old cheese).
I’ll add tinned fish to the mix. Oooh smoked fish - yes I forgot about that - gonna have to get some smoked salmon for our next trip
That’s all very similar to what we take with us. Apples with cheese are great, I agree!
Has anyone saved the parm rind and used it in stocks or soups to enhance the flavor/richness? I’ve read about it a bunch and have some saved up but curious to hear others’ experience.
