My heart really only wanted a big ole pile of sautéed onions and kale this morning. Added some mushrooms, garlic, hot hungarian paprika, and shredded sweet potato to the mix.
Do you just shred your sweet potato using a box grater? I hadn’t thought about having it shredded until I saw you post it before.
Yup just a box shredder! It cooks up so fast sautéed this way.

It was pretty good, however some of the chicken was undercooked and that kinda ruined the vibes.
Dinner is a yogurt bowl with more blueberries and a crushed up granola bar because we don’t really keep granola in the house (but maybe I should).

But i enjoyed shearing the mini veg spirng rolls and samosas yummy!! Hoi sin suace, sweet chilli sauce and my all time favourite tomatoe ketchup
Today’s smoothie (half, saving half for later):
- frozen banana, strawberry and blueberries
- 2% plain Greek yogurt
- chia, flaxmeal and peanut & cocoa powder
- handfuls of baby spinach and mint
- ice and water to desired consistency (so glad I learned that adding fruit juice was just added sugar)

Sounds like one of my favorites. A bit of chopped jalapeño is also a great little added kicker for flavor. Cilantro too. But I think mint is my all time favorite add.

I’ve just bought a mixer, because I saw all this nice smoothies and couldn’t bear it anymore.
Enjoy! It’s fun to make your own creations! Pro tip - if you like banana in your smoothie, you can cut them into chunks and store them in the freezer. It works great for me.
Grapes and blueberries also freeze well and are good in smoothies for ‘ice’. I also like using frozen bananas and blueberries for banana or blueberry bread or muffins.
Yeaaah… Doing this the same way since years. So you can store them, if they are in discount or too yellow
