I am mostly vegetarian … lately eating some chicken to get quick protein, frozen dinner because then no bloody chicken in my kitchen.
Healthy Choice Simply Delicious Chicken and Broccoli Alfredo, with the mango salsa, salad on top of it…

Thank you. This is a must make for me. But…I cant make it as my freezer is packed full of soups and meals what ive already made lasagne, moussaka and left over smoothie fruit :rofl:. Will get eating those first.

Took a break from TS but not from cooking! The fall-like weather has motivated me to make big batches of things to freeze and to share. My octogenarian neighbors have struggled with health issues/dementia and they have some food in their freezer now, too.

Big batch of beef and pork blend meatballs freeze/thaw really well - we have used them in Mediterranean platters, spaghetti (with homemade tomato sauce) and sandwiches.

A vat of beef, kidney bean and red bean chili!

Brunches! Ham, cheese and veg frittata and a tomato and whipped goat cheese tart (puff pastry). Tried @anon9289869’s shredded sweet potatoes for a hash with black beans and a fried egg. Mmmm!

“Taco” salad with fresh sweet corn, ground turkey and black beans, loads of veg.

Not pictured (because I’ve posted several!) include lots of BLTs and tomato and cheese sandwiches before tomato season is sadly over. My fridge and freezer are packed so I’ll be feasting on leftovers for a while yet!

Now to peruse what you all have been up to on one of my favorite threads! :heartpulse:

Lol! That’s kind. I’m grateful we don’t have any dietary restrictions to speak of and I can cook whatever I fancy, though we’ve been a bit meat heavy lately and I want to cut down.

Im sure you will figure out something super delicious to do while cutting back. If nothing else you could have just enough meat to flavor without making it the main actor. Feels like less of a change.
