I’m making chocolate beetroot cake again and just had to get a picture of the batter midway through making it.

Its worth growing beetroot just to make a cake like that. I’ll never pickle it again. Thanks for sharing the pic if not the cake.

Final batch cook for the week. Wanted to make a head salad to go with black bean soup for the week. I went with massaged kale, red onion, toasted pecan, strawberries, and blueberries with a vinaigrette. May toss in some cubed avocado in the moment, but didn’t wanna throw it in early and make it mushy.
Not any more than carrot cakes taste like carrot really. It has a lovely flavour and texture and is not too sweet either. I got the recipe from bakingmad.com x

Beet muffins?? I’ve never heard of this! Of course my only experience with beets are canned beets, so im sure thats why.

Kind of a fridge clean out! And using up some of my tomatoes.
I threw in a little handful of sprouted lentils too. I’ll see if hubby notices He’d skip the kidney beans if he had his choice. I’d add more (and variety of legumes) if I had my choice!

I forgot the French bread I bought for my short ribs last night
So I made my first bread pudding with half of it.
Sugar free too.
I used honey. I sprinkled fresh strawberries on top before baking. I’m not a baker. But this was pretty easy. It looked like bread soup

Got some homemade Pomodoro sauce from the Farmers Market. I wanted their Bolognese but they were sold out of it. The Pomodoro was excellent!! Happy I went for it.
Heat and eat.
