I Ordered these just for y’all.
Corncakes made with zucchini, red pepper, cilantro, jalapeño & onion, with honey.
No food in the house. We’re in between trips. Plus we go out a lot
Anyway…… I thought this was interesting and worth a post.

Breakfast I made for hubby. Three-cheese omelette with bacon & onion. Toast with local crabapple jelly. He’s not thrilled it’s whole wheat toast but he’ll survive

Today was sunny after a snowstorm last night. So nice to see the sun. It was 2°c and I bbq’d in a short sleeved shirt!
Burgers on the bbq, with a side of cheese & bacon tortellini for kiddo & me (with sun dried tomatoes & artichokes on mine). I did roasted potato chunks in air fryer for hubby. My burger had marble cheddar, basil & garlic aioli, lettuce, and mustard pickle hot sauce .

Ok so…I wanted to be lazy again tonight and eat out…but…it’s SO DANG expensive!! I decided I’d cook, but refused to go to the store for anything. With it being the end of the week, I didn’t think there was much in the house…but I was determined. Pretty happy about this one!
I took a half bag of quinoa pasta that was open in the pantry…poured in some vegetable broth and topped with a tin of “Trader Joe’s Grecian eggplant with tomato and onion” that I chopped up small with scissors… I added a can of artichoke hearts and topped with some vegan feta and vegan Parmesan and stuck it in the oven for a half hour. And then browned this package of Trader Joe’s chicken meatballs (first time trying them…they don’t have any suspect ingredients so I felt good about that…) and quickly sautéed two bags of spinach that were gonna go bad. Came out super tasty!
