I was too tired to post this last night, but my first attempt at a beef enchilada casserole came out pretty good. Eric loved it and there is room for improvement next time. The only adjustment I made to the recipe from America’s Test Kitchen was to add crumbled tortilla chips to the cheese topping added halfway through cooking. When I’m trying something I haven’t cooked before I go to them or Spruce Eats most often for guidance.

Hull out your tomatoes (I tend to plant seeds or add to jam), depending the size of the tomato (mine took 1 egg between them). Scrambled your eggs with salt, pepper, I added parmesan, then cook covered on a medium low stove or for 10mins in the oven. Wait til firm and enjoy.

Breakfast sandwiches for us this morning. Egg, ham, havarti, red onion, mayo and mustard, on English muffins.

250 g oats, 500 ml water or milk, 100 g applesauce, 1 teaspoon psyllium husk, 1 teaspoon almond mousse, some dried plums, 1 teaspoon cinnamon and some vanilla.
I made one some weeks ago and it turned out awful :joy: I used too much liquid I guess.
I hope this one doesn’t do the same.
Now it’s in the oven, 190 ° C for 30 minutes.

Friend and I made dinner together tonight while I stay with her this weekend :smiling_face_with_three_hearts: We were so healthy until we destroyed a huge piece of birthday cake from her daughters birthday earlier today lol
