Sour cream in mashed potatoes? I don’t know On the other hand I also thought Olive oil doesn’t taste good in mashed potatoes.

I was skeptical at first as well.
But a little soured cream and the reserved potato boiling water made a creamy mashed potatoes. Top it with some green onion or chives. Of course we added butter when served. My cholesterol blood work didn’t come back as well as I would have liked. So I may have to start improvising at home. Cut out all that butter I usually use. Maybe use a low fat sour cream.
Plain Greek yogurt is yummy in mashed potatoes too. Plus good source protein.
I often add sauerkraut into mine in my plate

I haven’t used butter on anything I want to eat in years. I have it in fridge but not interested in it for me. For instance, I cook eggs in olive oil not butter. I put olive oil on cooked potatoes not butter. I prefer the olive oil flavor. Each to our own.

I know nothing about this kind of meal,
but… I WANT THIS!
The basis is my regular banana bread recipe:
- 5 regular bananas
- 250 ml vegan milk of your choice
- 5 - 10 drops of stevia
Blend it - 1 package backing powder
- 250 g dry Incredients of your choice
For example:
100 g shredded almonds
50g shredded coconut
100 g oats
Mix all together,
if it seems to liquid, add a few oats,
if it seems to thick add vegan milk.
Put it in a bread or muffin sheet,
bake it ca 40 minutes at 185 degree!
Bananan cocos vanilla cashew muffin
Recipe as described, dry incredients are:
100 g vanilla protein (blend with banana and milk)
100g shredded coconut
75 g oats
Topping: coconut chips and cashews
Baked in muffin sheet.
I recommend variations with hazelnut and dark chocolate or with peanut butter in the inside, or topping with pears and cinnamon.
Variations are unstoppable
