Slow Sunday cooking pancakes. Gotta make sure my dad gets some good whole grains and protein in his diet sometimes…and it’s a lot easier to convince him when it’s something covered in syrup.
Not posting often here because of the obvious. You’ve already seen what I eat. But here is something I’ll try tonight. A good recipe consisting of: lentils. Called lentil tofu. Really easy. The only drawback is the cleaning as like my trials with self-made oatmilk: there are ingredients that get like glue when you cook them.
Went with the heavily grilled salmon on my Greek Salad tonight instead of the gyro. It was still pretty good though.
Carrots, zucchini, poblano, tomatoes with baby kale.
Eggplant, mushrooms, fresh ginger and garlic
Cranberries and blueberries
Post run breakfast. I’ve decided to start a running streak. Just 1 mile (minimum) each day, today was day 1
Update on the lentil tofu. Has a similar texture and taste (none). Should have added more salt during preparation (recipe said optional ). So trial accomplished. Need to do some stability testing in the freezer.
Finishing up leftover pancakes before I forget about them. Made a quick cranberry & date topping for them.
Ohh I heard about that red lentil tofu.

Frozen pizza for hubby. With added cheese. I always try to keep a few on hand as he loves them and they are a quick meal for me to make him that give a bit of leftover for his lunch.
Me, not so much a fan of them.
