Making crust for my chocolate cheesecake. Used a handful of organic chocolate kids animal cookies that were left, along with whole grain digestive cookies. I’m a woman of science, and I love rules, but when it calls for 2 tbsp of butter, I at least double it (same with garlic; I act in reckless abandon) which is why I’m not the best baker
Break in the baking marathon for some lunch! We’re almost through all those pizzas we made and I’d been saving this calzone I made with all the best bits, caramelized onions, artichoke hearts, and the cheese sauce with chopped kale. So good. Side salad with baby kale and spinach, baby tomatoes and cucumber.
With limited groceries in the blizzard, I’m using up what’s on hand. Had a burger bun to use that I made hubby’s tuna sandwich on. Celery, romaine… and I opted to add a few capers, as I’d bought a jar for myself. Well, heavens to Betsy, that didn’t go over well he’s not a fan. “What are these little balls??” I don’t get why not as he loves salt. But at least he ate it all

Here is the recipe I used. Step 1 where the dry ingredients are combined is when I added chile. I probably added a total of a couple few teaspoons but I just eyeballed it. Wish I could be more precise for you! This recipe makes dynamite chewy cookies though.

Gooey yummy lemon bars! One of my favorites. I don’t make “traditional” holiday type treats but this is really the only time of year that I bake much so I make what we like However, sugar cookie decorating tomorrow!

We got a brown sugar glazed spiral sliced ham.
Thought we’d have it for our dinner tonight so I can slow cook some split pea soup tomorrow. No family traditions in this house.
We made a salad together with purple kale, red leaf and spinach. Not a spec of arugula lots of veggies
And wifey made her famous scalloped potatoes to go with our ham.
