Christmas this year…non traditional…everyone has something to bring. Main dish…good old sliders. I have a bunch of sauces and condiments to go with…and just found this! Yup…making this shortly
Breakfast enchilada casserole with Mexican chorizo, yellow bell peppers, onions, jar of salsa casera (red), corn, black beans, chopped serrano chiles, cilantro, Mexican blend shredded cheese and egg/milk mixture layered between toasted corn tortillas. Topped with sour cream, more cilantro, scallions and avocado. First time making this and it’s a keeper!
Last night my son was at his dad’s, so, having passed almost the entire day reading etc., I made these. Normally, I don’t like festivities - actually, all the frenzy and the “must do this&that” thing - though I am pleased when I go out and see the decorations and feel the atmosphere. But this year I decorated the Christmas tree and I plan to make a panettone for Orthodox Christmas (I’m pretty much an atheist, but will be celebrating at my friend’s house :-)).
Oh, to make the taste more interesting, I used the pestle and mortar to reduce an anise star in powder and add it to all the other spices. The decoration is… but I was never good at it.
Wow, star anise sounds intriguing! How strong was the flavor?
Today’s spread. Since my fella’s little smoked sausages in BBQ sauce occupied the mini slow cooker, I decided to bake a spinach artichoke dip in the toaster over. I much prefer how it turned out this time and can’t believe I haven’t utilized the appliance for baking much before! Happy holidays, foodies!
P.S. I had to show off the warming stone and basket my husband got for me. It’s terracotta and warms up in the oven for 10 minutes, then keeps the bread, tortillas, etc warm! I love it!

Pears, Sweet potato, avocado, red and white quinoa, cranberries, tomato, cranberry pear vinegar, olive oil, my grandmother’s plates.
One hundred years ago when the plates were made they made them with a six inch diameter circle where the food would go… meat, potato/starch, vegetable. There were separate plates for salad, bread and dessert. With the change in plate style so has gone the change in most Americans physiques… or perhaps it was the other way around…

After hosting my dads side last night and all that required…my husband and I had a very chill Christmas Day with his mom. She’s getting older and forgetting more, so he asked that I learn her meatloaf with potato and onions. This meant I didn’t have to plan, shop for or execute a second Christmas dinner today….score! It was comforting and tasty. I think there’s adjustments to be made to perfect, but I was happy to learn a family recipe today
