Foodies Unite #6 (trigger warning food) ANOTHER ONE BITES THE CRUST!

Huh, I am not sure how I feel about that  Itā€™s odd really, because refrieds definitely go with cheese. I might give this a go today. I canā€™t fathom how they taste together. Theyā€™re TOUCHING. :grimacing: :joy:

Can we talk about this? This is the driest f*ing banana bread, ever! I know a couple things: Baking is tedious to me. I am too tired to be bothered with directions. I am out of GF 1-to-1 flour. I used brown rice. I used a hospitalā€™s diabetic recipe. Donā€™t trust those. #donotrecommend. The flavor is very good. Itā€™s my fault itā€™s dry. Whatever. Just add a ton of whipped butter and itā€™s all good.

Your congee looks amazing! I would like to try congee some day. When I need something homey I choose chicken and rice with the rice boiled down to mush. This looks fresh and flavorful. Do you have a recipe you would share?

II drove to the grocery store on my break at work today. My body was in need of vegetables! I cooked them for about 2 minutes in the oven at work and are them with a small butter and salt packet.

Good for you for eating your veggies! Iā€™m making a big salad tonight for that reason, too.

Avocado Toast
Crusty Italian toast, smashed avocado, pickled onion & fresno chilis, cherry tomatoes; arugula & radish; & scrambled egg whites.

Absurd amount of arugula but I didnā€™t complain and ate most of it.
The fresh fruit was amazingly fresh and great! Along with the vegan sausage patties @EarnIt The waiter didnā€™t know what kind it was. Heā€™d never eat ā€œthat!ā€
It was as good as any sausage.

Iā€™m curious, too @Juli1, my Mami used to make us a Mexican version of rice porridge that weā€™d have with different toppings. As little ones we craved sweet, though, so usually honey and cinnamon. A strange combo we had often was leftover Mexican rice (the tomatoey kind with peas and carrots) with a banana sliced on top!

Still needs to cook, but chicken pesto with sliced roma tomatoes and mozzarella. I have a nursing lab tonight, so i put it in the crock pot for later. Crock pots help to have a home cooked meal while busy!

Iā€™m loving all your healthy meals. They all look so yummy. Has your cholesterol gotten better?

Thanks. And not yet. Doc is giving me until spring to get it under control with diet first. She started pushing the statin drugs right away. It was my suggestion to try it with dirt first. Ya know since I quit drinking I didnā€™t give a shit what I was eating. As long as I wasnā€™t drinking. Iā€™m hoping I win this one.

Ya even the arugula wasnā€™t bad :stuck_out_tongue_closed_eyes:. But I knew it was coming. That makes a difference.

My mum had really bad cholesterol and a genetic kind
(I think its called that)
She made as big jug of lemon, ginger and garlic and drank a cup every morning for around 6 months and it brought her cholestral down, and everyone was shocked even her Dr.
Iā€™ll double check with her tomorrow how she did it and let you know just incase itā€™s something you want to give a go :hugs: thatā€™s if you arenā€™t already.

I will write down my personal congee recipe for you today. The base is easy, but to me itā€™s the way the other things are put together.

Congee magic recipe :crystal_ball::rice::fish_cake:

Congee base:
Basmati rice (i prefer basmati) 1:10
with water
200 g rice, 2000 ml of water
Boil until itā€™s cooking
Then let it simmer on lowest possible
heat for 4 to 6 hours

Thatā€™s the boring base.
There are a lot of articles about how it works on our bodies based on traditional
chinese medicine. And I think it works brilliant. It is always satisfying and you can pimp it up in accordance with your health state. If one is sick, itā€™s real good to eat it pure.

First 2 recommended additions:
Fishsauce
Pinch of butter

I prefer my congee as follows when I am healthy and just want something nourishing and detoxing and satisfying as follows:

  • Broth
  • Congee base
  • Steamed veggies
  • Protein spiced with curry or sojasauce

And it has to be put in the bowl for serving separately, exactly in this order. Not mixed in one pot before. Thatā€™s very important to me.
You c its a bit spiritual :sweat_smile::smiling_face_with_three_hearts:

Example variations:

  • Broth: veggie, chicken, beef or I used dashi this week, as I had some bonito flakes at home i didnt use for a long time

  • Steamed veggies: thin slices of carrot, leek, cabbage, champions or other mushroom, broccoli (I would recommend not more then 3 different veggies)

  • protein: chicken, tofu cubes or crumble, vegan meat, fishballs seasoned with sojasauce or curry and something sweet
    (i use stevia)

Serve it in the described way :point_up:t2::sweat_smile: and sprinkle with fish or sojasauce and that pinch of butter.

Happy to c your variations

PS: you can freeze or can the congee base

Itā€™s horrible and I am sure there are very few countries without the problem. If you ever saw the doc OMG GMO!, it talks about crap in the water all the way up into the mountains, where there are no people. Itā€™s prolific. And so many people still donā€™t think about the consequences. Businesses are still caught dumping crap into waterways, people still wash chemicals into our street drains. Itā€™s all messed up. Donā€™t share this shit when I wake up anymore!

I am going to a steak house for book club next week. All the ladies will be drinking their asses off, so I am going to indulge on a fine dining experience. No worries, drinking in restaurants is not a trigger for me. I donā€™t like like to drink out, especially in the winter.

So, question:

  • Eat all the things.
  • Take a page out of Dazerā€™s playbook and go easy.
