Baked potato night, and first time doing them using the air fryer function on my countertop oven. Also first time cooking them 5 minutes in the microwave first to speed things up as I started dinner late. Beef and bean chili from the freezer to top along with sour cream, cheese, scallions and steamed broccoli. My fella put butter and twice as much sour cream before I snatched the container from him :laughing: He’d eat the whole container if I let him. Turned out great, awesome crispy skins (I sprayed with light oil to coat before air frying) and was comforting after some heavy lifting clearing snow today!

The sauce was actually from a little jar I had on hand :laughing: peanuts, coconut milk, red chilli paste, spices etc
