This is what we used to do. When the second knead is done and it beeps, you slide your hand in the mold, loosen and pull the paddle out by pushing the dough aside a bit, and then let it get back into shape.

I listened to your coffee guy’s YouTube and heard him say that in Italy the Italian pastries are appropriate for breakfast so that you can truly enjoy and appreciate them, because after a meal it is too much … or something like that. All beautifully made. And makes good sense. Enjoy your walk to the next town. What’s the maximum amount of miles you’re walking?

It’s only about 2 miles. But on the road on the Ligurean sea and then into the forest up hills and down it took almost 2 hours. And gorgeous weather.

Couldn’t really eat breakfast, felt stressed, but then came home from work famished! Double open faced sourdough sandwich with grainy mustard, avocado mash, tomato, provolone, mesquite turkey, cucumber, radish micro greens. :heart_eyes:

Last big night in Florence


They’re going to serve us a big taste of Tuscany. I couldn’t keep up on all of it.

Hams hanging from the ceiling curing. Yes they use them Prosciutto!


Some kind of onion. It was really good.
