I second @Jesile. That recipe looks tasty, but gazpacho it is not. Only tomatoes, green pepper, cucumber, garlic, bread, olive oil, salt and vinegar belong in gazpacho.
They are quick pickled, need to be refrigerated and don’t last forever, just an fyi! But they last a long time. I make them all the time, too, @HoofHearted Sooooo tasty. You use more sugar than I do! You can also put other herbs in to give them different flavors. I like them for about a week while they still have some crunch and then they end up getting a bit soft but still have that awesome flavor.

BBQ leftovers (grilled chicken, green beans) with grilled corn cut off the cob and added to a black bean salad. Included in salad: chopped grape tomatoes, yellow bell pepper, scallions, cilantro and a lime + cayenne vinaigrette.
