I use Swerve, which I haven’t found to have an aftertaste at all… especially when baking with it. They have granular, brown, and powdered. For drinks, I use Pyure Organic Liquid Stevia and I’ve never noticed an aftertaste with that, either. Of course, you use very little. A tiny bit goes a long way. I think that those who get that bitter aftertaste have used too much.

Here’s the recipe from the back of the coconut bag. They don’t use sweetened condensed milk. They do use almond extract which seem like it would give it a good flavor similar to the sweetened condensed milk.
I would think about the honey and maple syrup, I don’t know if you say no to that or not.
They are natural sugars.

About the sugar replacer with better taste, is this something you can try Eric: erythritol.
But maybe you know it already and you didn’t liked this one as well?
My friend says she uses monk fruit and stevia.
I see in the article it’s sometimes mixed with the erythritol.
My vote is for honey and almond extract in the evaporated milk to make sweetened condensed milk and use your original recipe.

I feel like I’m cheating though. I found these at the Rite Aide the other day. They’re pretty good. Says no sugar.
Congratulations on 136 days of no added sugar, Eric! Being at 136 days sober, AND with it being Christmas time, I’ll have to tackle the no added sugar thing later. But I’m really proud of you!
I just found this thread! Don’t know how it took me so long…just my annoying nutritionist angle on sugar…sugar is sugar and all of it is just as bad. If we are being honest, the fake stuff is a lot worse than the real stuff. The FDA does not acknowledge fake sugar (erythritol, stevia, etc…) on food labels which is why people believe what they are eating is better because it says no sugar. I tell my clients if they must eat sugar, eat the real thing. We don’t know the long term side affects of eating things with fake sugar. Stick to fruit. Things that have naturally occurring sugars in them that won’t make your levels spike. Just my two cents but you know I can’t not say something regarding this! It’s a hot, controversial topic but for me, I stay away from it all. (Except for milanos every once in a while…Damn are those cookies good!) But do what works for you!
I use erythritol (Swerve), but I do agree that it’s healthier to use real sugar if you must. I’m trying to get used to treats not being as sweet. I’ve been using half or less of what’s called for, and now when I have something that’s actually sweet, I don’t like it as much. I’m getting there!

Thanks for weighing in @mleclaire i appreciate your input. I guess in the long run. Real food is always the best choice. Real butter. Real sugar. Real fat. Not low fat. Unpasteurized cheese etc……
I think for me I’m just learning I can’t handle desserts or sweets no matter what I make them with. It’s like drinking. I indulge. And then I feel like shit. Best to just abstain. @Its_me_Stella
I love that, too. I rarely have sugar, so it’s not that important to me. But what is important is that I make healthier desserts for those I love who can’t have sugar at all. For the kiddos, I use applesauce, bananas, or honey to sweeten. I really love that their parents see the importance of their children not having a lot of sugar. I always use full-fat, real butter, cheeses, cream, and milk. It’s not only healthier than the alternatives, it tastes much better.
@LeeHawk a quick search on Amazon for sugar free salad dressings will give you a plethora of options. Lots of different brands to choose from. Some you can find in store too if you know what you’re looking for.
