Foodies Unite #2

Oh, hooray for a foodies thread! I love fooooood and cooking and definitely eating. But there is something so fulfilling about fixing a nice meal for people you care about. Dinner recently was a ginger-lime-chile marinated and baked tofu thrown in with stir fried veggies.

Yeah they’re not bad. The directors told me they wanted a basic pub menu but done well with a few quirks to make it interesting; but it had to be relatively inexpensive … difficult to do when they want such underprepped huge portions. I managed to compromise with them and told them that If I can do away with the quirks (which no-one likes anyway) and instead give them a menu which uses most of the same raw and regenerated product, I’ll be able to recoup the vast majority of stock that would originally go to waste and turn it into other things so it basically saves money when it’s not making money.

E.g.

All the veg comes from the same raw Sunday veg - Whatever isnt used on Sunday goes into the curry, the stocks, the veggie patties, the vegan cottage pie and all of the side plates provided it’s been cooked correctly.
The pate cost about £30 to make 140 portions so it turns almost a 1000% profit. The pork croquettes are made out of my pork loin from Sunday roast meat. The gammon is my sunday ham. Soup will always be vegetarian but will always be made out of stuff I’ve already got. The cod goujons are made from the same stock as the fish and chips… and the apple slaw and coleslaw havent had the mayo/pectin added yet so I just do it to order to save wasting all that veg.

I think I worked out that off the back of all the stuff I’ve prepped from the initial cost of about £1120, plus whatever my fee is, theres about £18,000 profit sitting in it.

Zero frozen veggies left, cans picked over. I am fortunate for this haul; a community initiative food box from local food distribution company. It’s a monthly thing, and I happened to order it a few weeks ago. My boys won’t eat kale or cabbage so I’ll be hiding it in something :thinking: Also making something soup for our seniors down the road :ramen:

Good for you making food for elderly folks. I do meals on wheels here once a month. They love having visitors and meals delivered.

Had the best lunch yesterday. I had 2 pounds of burger to make our favorite spaghetti Bolognese. But the recipe only calls for 3/4 pounds of ground beef. I was doubling the recipe so I had half a pound of ground left over. Instead of just dumping it into the fey pan anyway I saved it. Trying to stretch the groceries we bought. Anyway…
yesterday’s lunch.
Pan fried 2 quarter pounds ground beef burgers.
Toasted English muffin.
Melted American cheese.
Mayonnaise
Fresh onion.
Little lettuce.
It was the best burger I’ve had in a real long time. It was so good it even made me remember the first time someone cooked me a burger on an English muffin with mayo when I was real young. I remember thinking what are you doing to that hamburger?? So simple and so good.

I put a twist on banana bread and it is out of this world. Super easy too.
Banana bread with chocolate and chocolate ganache.
